In jüngster Zeit haben die Sozialwissenschaften ein Interesse an den Erzählungen und Geschichten von Individuen und sozialen Gruppen gezeigt, weshalb diese Neigung als "narrative turn" bezeichnet wurde. Sie basiert auf der Behauptung, dass Erzählungen Teil des sozialen Lebens sind und dass sie es uns ermöglichen, die Bedeutung zu verstehen, die Menschen ihrem Leben geben, und darüber hinaus die eher strukturellen sozialen Elemente hervorheben, die sie neu definieren (Sparkes & Devís, 2018). Daher sind Erzählungen ein wichtiger theoretisch-methodischer Weg, um Identitäten, Zugehörigkeiten, Unterscheidungen, Rituale oder andere soziale Prozesse zu beschreiben, die mit kulinarischen Räumen und insbesondere mit der Art und Weise der Zubereitung und des Verzehrs von Speisen in einem bestimmten Kontext verbunden sind. Diese einleitende Studie soll dazu beitragen, ein Modell für die Analyse von Erzählungen kulinarischer Räume als strukturelle Situationsberichte zu entwickeln, die Formen, Inhalte, Funktionen, Handlungen und soziale Strukturen ethnographisch erfasster kulinarischer Ereignisse offenlegen, sowie einen konzeptionellen Rahmen für die in diesem Buch vorgestellten Texte zu schaffen.

Recently, the social sciences have shown an interest in the narratives and stories of individuals and social groups, which is why this inclination has been called the "narrative turn". It is based on the assertion that narratives are part of social life and that they allow us to understand the meaning that people give to their lives, in addition to highlighting the more structural social elements that redefine them (Sparkes & Devís, 2018). Thus, narratives are an important theoretical-methodological way to spell out identities, belongings, distinctions, ritualisations or other social processes associated with culinary spaces and in particular the ways of preparing and consuming food in a given context. This introductory study aims to contribute to the construction of a model for analysing narratives of culinary spaces as structural situational accounts that reveal forms, contents, functions, actions and social structures of ethnographically understood culinary events, as well as a conceptual framework for the texts presented in this book.

Récemment, les sciences sociales se sont intéressées aux récits et aux histoires des individus et des groupes sociaux, raison pour laquelle cette tendance a été appelée le "tournant narratif". Elle repose sur l'affirmation que les récits font partie de la vie sociale et qu'ils nous permettent de comprendre le sens que les gens donnent à leur vie, en plus de mettre en évidence les éléments sociaux plus structurels qui les redéfinissent (Sparkes & Devís, 2018). Ainsi, les récits constituent un moyen théorico-méthodologique important pour expliciter les identités, les appartenances, les distinctions, les ritualisations ou d'autres processus sociaux associés aux espaces culinaires et en particulier aux manières de préparer et de consommer la nourriture dans un contexte donné. Cette étude introductive vise à contribuer à la construction d'un modèle d'analyse des récits d'espaces culinaires en tant que récits situationnels structurels qui révèlent les formes, les contenus, les fonctions, les actions et les structures sociales des événements culinaires ethnographiés, ainsi que d'un cadre conceptuel pour les textes présentés dans cet ouvrage.
