Insect pests cause significant damage to agricultural products intended for human foods and animal feeds. In addition to direct losses caused by insects to plant systems, fruits, and seeds. Up to 40% of global crop production is lost to plant pests and diseases, says the U.N. Food and Agriculture Organization. So, many strategies were conducted to overcome on insect pest infestation.

El Kéfir es un producto lácteo fermentado que aporta minerales como calcio, magnesio y fósforo; vitaminas del grupo B, vitamina K; aminoácidos esenciales y proteínas de fácil digestión. Este estudio tuvo como objetivo la elaboración de un kéfir de mango adicionado con moringa como alternativa de aporte proteico y la realización de sus análisis microbiológicos, bromatológicos, fisicoquímicos y sensoriales. Para la realización del producto fueron empleadas tres formulaciones: Control, tratamiento 1 (mango) y tratamiento 2 (mango y moringa). Lo resultados obtenidos en los análisis microbiológicos de NMP de Coliformes totales se encontraron dentro de los parámetros estipulados por la resolución 2310 de 1986. Los resultados del análisis sensorial evidenciaron que los tratamientos 1 y 2 presentaron mayor aceptación sensorial que el tratamiento control en cuanto a olor, sabor, textura e impresión global. Los análisis bromatológicos revelaron un mayor porcentaje de proteínas (4,1%), ceniza (0,7%) y fibra (1%) en el tratamiento 2 comparados con los otros tratamientos. La colorimetría mostró que el tratamiento control presentó tonalidad clara, roja y azul, en comparación a los tratamientos restantes, los cuales presentaron tonalidades oscuras, verdes y amarillas. Por lo tanto, se concluye que, de acuerdo a los resultados obtenidos, el kéfir se considera un producto adecuado para el consumo humano debido a su aporte nutricional, sumado a que a nivel sensorial tiene agradable color, olor y sabor y es aceptable al consumidor.
