Jean-François de La Harpe a évoqué l'origine de Deustache, qui serait liée à un livre imprimé en 1603 à Rouen par Laurens Sonnius, intitulé Histoire merveilleuse et prodigieuse de la vie de saint Augustin, évêque d'Hippone. Ce livre contient des gravures d'illustration dont l'une représente des pénitents implorant saint Augustin de les délivrer du fléau de la peste, mais un de ces pénitents pourrait être le pirate Deustache.
