Eulália Cristina Costa de Carvalho: Master in Health and Environment - UFMA. She has a degree in Nursing and Obstetrics from UEMA, a postgraduate qualification in Family Health Nursing (Estácio de Sá), and a postgraduate qualification in Food Health Surveillance (UEMA). She is also an administrative technician - a nursing technician at the University of Maranhão Foundation (HUUFMA). She is a writer and poet with two published books, one in Brazil (2009) and the other in Porto, Portugal (2011), and has taken part in various literary collections and competitions. She is a member of the Academies of Letters and Sciences in Brazil and a corresponding member abroad. Adenilde Nascimento Mouchreck: She has a degree in Industrial Chemistry from the Federal University of Maranhão (1980), a master's degree in Food Technology from the Federal University of Ceará (1996) and a doctorate in Food Sciences from the Federal University of Lavras (2004). She is currently Associate Professor III in the Department of Chemical Technology, in the Postgraduate Programme in Health and the Environment (Master's Degree), a member of the Board of the Food Hygiene Journal, and a Fapema Productivity Fellow. She is the coordinator of the UFMA Food and Water Quality Control Programme.
